When Cocoa Waste Turns to Gold: Innovation That Could Inspire Côte d'Ivoire

What if cocoa waste became a new source of wealth for producing countries?
That is exactly what an innovation from Brazil demonstrates, where researchers have managed to turn cocoa bean shells — long considered mere residue — into a gourmet, high-value product: a naturally chocolate-flavoured honey.

A huge opportunity for the Ivorian sector

Every year, Côte d'Ivoire produces millions of tonnes of cocoa… and therefore thousands of tonnes of shells from industrial dehusking. Today, these shells are mostly used as compost, fuel or, sometimes, simply thrown away.

The Brazilian approach shows they can become much more:
a strategic raw material for agro-processing,
a source of additional income for cooperatives,
a concrete lever for the circular economy in the cocoa sector.

The principle: simple, natural and sustainable

Researchers at the UNICAMP university in Brazil discovered that native bee honey could serve as a natural food solvent to extract the compounds still present in cocoa shells:

  • theobromine,
  • caffeine,
  • antioxidant polyphenols.

The result: an enriched honey with a naturally chocolatey taste, with no added sugar and no artificial flavours.

What Côte d'Ivoire can take from it

For a country that leads the world in cocoa, this innovation opens up very concrete avenues:

  • Premium "Made in Côte d'Ivoire" products
Cocoa honey, natural syrups, ingredients for pastry and craft drinks.
  • New local value chains
On-site processing of residues, creation of rural jobs, added value for cooperatives.
  • International positioning
Sustainable, innovative products, perfect for winning over European and North American markets that care about ecology and traceability.

A vision for the future of cacao.ci

At cacao.ci, we believe that the future of the Ivorian sector rests not only on the quantity exported, but on creating local value.
This "chocolatey" honey is a powerful symbol:
that of a cocoa that no longer stops at the chocolate bar,
but becomes a source of innovation, gastronomy and sustainable development.

The cocoa revolution also runs through its waste.
